A fast-growing London restaurant group was able to formalise their sustainable procurement policy in line with existing ESG metrics and set realistic ESG targets with suppliers. In the process they also learnt a lot about their supply chain that has enable them to better consolidate their product inventory, identify significant price fluctuations, and negotiate with suppliers. This saved them x in just the first month.


We are really kind of stuck in that one - it should ideally be focused on helping them achieve product traceability for their meat products, local sourcing, reducing packaging during transport and use of ethically sourced organic coffee and wine. That would be my focused metrics for them
