Asma Khan’s popular Darjeeling Express is the product of an all-women team of housewives. Creating a restaurant that feels like home has been Asma’s ambition from the outset. The effect is so powerful that some guests are brought to tears with memories of home. In this interview, Asma will share her experience of hiring, training and retaining a non-traditional team. With fears of talent shortages this year through the combined effect of Covid and Brexit, perhaps we should be looking to discover hidden talent locally and support their development into skilled and loyal employees?

Asma Khan is the chef and owner of Darjeeling Express. The first British chef to feature in Netflix’s Emmy nominated Chef’s Table and the first chef to be featured on Vogue’s list of 25 most influential women of the year for 2020. Khans’s debut cookbook “Asma’s Indian Kitchen” was the winner in the U.K. category for food publishing in Indian cuisine in the Gourmand World Cookbook Awards. In 2021 Khan was shortlisted by GQ Food and Drink Awards in the Veuve Clicquot Innovator category.
